Local cuisine is famous around the globe and tuscan wines are amongst the best you can find in Italy.
You can find great restaurants like "Da Maria" or "Il Frantoio" (both are a little expensive) in town, but you should experiment a little bit to find out what's best because there are special dishes for everyone of the available restaurants.
If you like fish meals, you MUST go down to "La Selva" at Selva Nera (less than 10 minutes by car), which also has got a wide variety of wines available.
You should try Wild Boar, tasteful daily fish preparations and lots of other tongue enchanting meals should be tried before you leave !
I suggest you to try Morellino di Scansano (Red wine, ask for the one from the wine producer "Fattoria Le Pupille") and also pay a visit to the wine growers cooperative in Capalbio, they have fine wines at a reasonable price (http://www.cantinacapalbio.it) try "Poggio de' lepri" (red) and "fior d'ansonica" (white).
Also feel free to ask me directions for where to dine or places to visit, i'll be happy to help you.
