Chef Karl Holl has cooked at a wine bar and tea shop, at a lauded San Francisco trattoria and in the middle of the forest. Now, he’s making lobster rolls next to a pool in the middle of Central Oregon. And he’s making beet and strawberry salads in a ritzy resort restaurant. And he’s making party-cut pizzas and burgers in a family friendly bar and grill.

Karl Holl, Portland Monthly’s 2018 Chef of the Year, is the new executive head chef at Brasada Ranch, a sprawling, 1,800-acre Powell Butte resort between Bend and Redmond. The resort is home to multiple pools, an athletic center, horses, a golf course, and mountain views, as well as two restaurants, two poolside snack bars, and a general store.

Managing the various food vendors throughout the resort is Holl’s new job, and he’s started incorporating his influence. He transformed the adults-only pool snack bar into a seafood shack, and has shifted the menus at Ranch House and Range to include dishes like elk meatloaf sandwiches and stone fruit-accompanied pork milanesa, respectively. He also brought a little Portland talent with him: Daniel Green, formerly the head baker at places like Ava Gene’s and Tusk, is the executive sous chef, covering the pastry and bread programs throughout the resort.

***Please note we provide limited supplies per reservations on shampoo, conditioner, body wash and hand soap. We do recommended if you are booking with a large group to bring extra bathroom supplies.

Please note there is a non-negotiable, per person, per night, resort charge for all guests six years of age and older. These fees will be charged to your reservation after booking. Resort fee is collected even if you choose not to use the facilities.

The resort fee provides guests with access to golf, spa, multiple pools (indoor and outdoor), fitness room, open-air peloton studio, tennis, horseback tours, stocked ponds for fishing, kids center and daily kids' activities (some advanced reservations and additional fees may apply).

-Resort facilities shall be open on the days and during the hours as established by the Resort. The Resort reserves the right to close portions of the Resort facilities or restrict access for any reason. At this time, the gym/pool is staffed and open to all from 10 am to 8 pm.

HOUSE RULES
*Please follow these house rules. If our team notices these have not been followed you could be liable and subject to a fee.

No shoes allowed in the home. Please remove your shoes upon entering the home.
Please keep food in kitchen area. No eating or drinking in the bedrooms or living room.
Please keep all children’s art supplies and krafts away from upholstery and carpet. No coloring or art and crafts in the bedrooms or living room.
Children 5 years and younger must be under the supervision of an adult at all times.
No smoking of any product inside the home or within 20ft of the exterior of the home and please pick up after yourself around the property.
When using the BBQ please pull it away from house and ensure a 3 foot clearance around all sides.
Please pick up all trash (inside and out) upon check out and place it in the trash and/or recycling bins.
If you move furniture or decor items please put them back in their original place.
We understand accidents happen, if something is broken or damaged during your stay, please notify us so we don’t stumble upon something when we come in after your stay.
Please double check for personal belongings before departure. If items are left and you’d like us to mail them we require payment prior to shipping.
